Prince Regent Tort “Prinzregententorte”

The crown jewel of Bavarian baking is in our opinion the 8 layer “Prinzregententorte”.

Named after the Bavarian Prince Regent Luitpold, this cake’s eight layers pays tribute to the eight regions of Bavaria during his reign. Eight individual baked layers assembled with chocolate butter creme in between each and covered with chocolate glaze is a favorite at special occasions. We included the original recipe and also Karin’s own somewhat easier party variation, consisting of 4 layer squares, pictured below. Same great taste and same amount of delicious calories as the original, but in an easier serving size.

In Bavaria a very common luncheon meat is what we would call here Souse or Head cheese. The name alone, with the added looks of it in the Deli counter, will turn off many of us who were not introduced to it in our youth.

But let’s point out one little fact, the meat in it is very coarse and usually embedded in gelatin. There is no way to hide anything in it, you see skins, which they use to produce the natural gelatin, this part is the same ingredient as the wide spread snack of fried pork rinds, besides that you will usually see meat in it, now let us grind this meat extra fine and call it bologna, which most of us eat. Do you see where I am going with this.

Now let me introduce this with a little twist to our quality control standards. Even when we had our store I was not allowed, by my wife’s orders, to use skins or any fat whatsoever. This brought about the Suelze recipe we published in Inge’s Kitchen, we also included a step by step storyboard on the website.

Bavaria, a gem to visit!

The sights of Bavaria alone are well worth  a trip and should be included on your proverbial “Bucket List”. We did not even start talking about the food, the festivals and all the other things combined in  “Bavarian Gemuetlichkeit”.

We will try to give you ideas what to see and what not to miss. We will write about the customs and other traditions in this beautiful region. Write about festivals which can be planned in on a trip and we do not just mean the biggest beer party in the world, the Oktoberfest in Munich.

We will discuss some out of the way places and local secrets the travel gurus never heard about, which could introduce you to the local way of life up close and personal.

The Food of Bavaria

Schnitzel and Potato Salad

The biggest misconception about Bavaria is that the food choices are very limited. Yes, we like our Schnitzel, Bratwurst and Sauerkraut, but we also like Fish, Beef, Lamb, Venison, Poultry and Pork.

Many types of excellent cheeses originate in Bavaria and it also offers a wide variety of tempting cakes and tortes, like the exquisite Prince Regent Torte.

In this section, we would like to introduce you to some common Bavarian foods, some you might find strange and some which are very popular here in the USA.

A collection of these recipes can be found at our Inge’s Kitchen website.  We will highlight some of these recipes  and will let you know here which one’s are just added.

We naturally will also add our favorites given to us by our customers during our time in the meat business.

Some of the recipes come from old sources, from a time when you burned off the fat and calories without a health club membership, so cook, serve and eat at your own risk.

Some of the recipe are sinfully good – definitely not DIET FOOD!!!
